Butternut Squash Soup

Ingredients

1 butternut squash -- Peeled, deseeded, and chopped

1 onion -- Chopped

3 celery sticks -- Chopped

1 veg stock cube -- Dissolved in 750ml hot water

½ teaspoon ground cumin

½ teaspoon ground coriander

Directions

  • Put the squash, onion, celery in a large pan, add the stock,cumin and coriander. Bring to the boil, then reduce the heat and simmer for 20-25 minutes until the vegetables are tender. Blend until smooth and velvety. Serve with fresh coriander, or chopped chives if feeling poncy.
