Chipotle Beef Rigatoni
Ingredients
350g Rigatoni pasta
========
200ml water with beef stock cube
2 cloves garlic smashed
500g beef mince
Carton 500g tomato passata
Jar of Spicy Chipotle paste
60g Grated cheddar cheese
100g Baby spinach
1tsp sugar for the sauce
Directions
- SERVES 4
- Cook the rigatoni in boiling salted water. Cook until tender, 12 mins.
- Heat a large frying pan (no oil), once hot add the Beef Mince.
- Fry mince until browned, make sure to stir well and drain excess fat. Season with salt/pepper.
- Add the garlic and chipotle paste to the beef. Stir-fry for 1 min.
- Stir through the passata, beef stock paste, sugar and water for the sauce.
- Simmer until the sauce has thickened, 5-6 mins.
- Once the sauce has thickened, add the spinach to the pan a handful at a time until wilted and piping hot, 1-2 mins.
- Stir through the cooked pasta and three quarters of the grated cheese.
- Add a splash of water if it is a little thick.
- Serve and sprinkle remaining grated cheese on top
