Jamie's bacon mint and peas

Ingredients

25 gram butter

10 slice streaky bacon -- chopped

300 gram frozen peas

1 bunch fresh mint -- finely chopped leaves

150 gram parmesan -- grated

400 gram pasta -- shells or other shape

1 carton creme fraiche -- small tub

1 lemon -- juiced

Directions

  • Prepare the pasta, start it cooking in salted water.
  • In the meantime, melt the butter in a large, high-sided frying pan and add a glug of olive oil. Fry the bacon, sprinkled liberally with black pepper, until the bacon is golden and crisp.
  • Add the frozen peas and give the pan a good shake. After a minute or so add the creme fraiche and chopped mint leaves.
  • Drain the pasta when it is ready, retaining some of the cooking water. Stir the pasta into the pan.
  • Add the parmesan and any of the retained pasta water if needed, and then add the lemon juice to taste.
