Joan's chocolate cake
Ingredients
4 ounce butter or margarine
5 ounce self-raising flour
1 ounce cocoa
6 ounce caster sugar
2 large eggs
1 tablespoon mayonnaise
3 tablespoon milk
3 tablespoon icing sugar
1 tablespoon more cocoa
4 tablespoon water
Directions
- Grease and line a 2lb loaf tin.
- Put all the cake ingredients in a bowl and mix for 1 minute (all ingredients except icing sugar, more cocoa and water).
- Cook at 180C for approx 45 minutes until firm.

- Melt syrup ingredients together (icing sugar, more cocoa and water) - use more water if necessary - and boil for 1 minute.
- Assembly ...
- Pierce the hot cake using a metal skewer in a 3/4 inch grid and pour over the syrup.
