Moroccan Chicken

Ingredients

1 large onion -- finely diced

2 clove garlic -- crushed

3 skinless breast of chicken -- chopped

1 teaspoon ground coriander

1 teaspoon ground cinnamon

1 red pepper -- diced

1 red chilli -- finely chopped

6 seeds from cardamum pods -- ie seeds from 6 pods

450 milliliter chicken stock

1 tablespoon chicken gravy granules

1 tablespoon fresh oragano -- chopped

1 tin tomatoes -- chopped

1 teaspoon lime zest

Directions

  • Dry-fry the onion and garlic in large frying pan until soft. Add the chicken and spices. Cook until the meat is sealed. Add the stock, gravy granules and all the remaining ingredients. Cover the pan with a lid and simmer for 35 minutes
  • Serve hot with couscous
