Spiced Bean and Spinach Soup

Ingredients

1 tbsp olive oil

1 medium onion, peeled and finely chopped

1 large garlic clove, peeled and crushed

1 tsp ground cumin

1 tsp harissa powder (or 1tbsp harissa paste)

1x400g can chopped tomatoes

500ml water

1 vegetable stock cube

1x400g can cannellini beans, drained and rinsed

1x400g can chick peas, drained and rinsed

200g frozen spinach

Add Jalapenos at the end if desired

Directions

  • In a large pan warm up the olive oil, then add the onions and gently fry stirring regularly
  • Add the garlic, harissa and cumim and stir in for a few seconds
  • Add the tin of tomatoes, stock cube, and water and bring to a simmer
  • Add the spinach, give a about 5-8 minutes cooking time
  • Give the soup a whizz with the stick blender until smooth-ish
  • Add the Cannellini beans and Chick peas and warm through
  • Add jalapenos if you want them
