Vegetable Dhal
Ingredients
1 tbsp coconut oil
1 onion finely diced
2 garlic cloves finely chopped
5cm fresh ginger grated
1 2tbs coriander stems finely chopped
1 sweet potato diced
1 tbsp curry powder
½ tsp tikka curry powder
200g red lentils
500ml hot vegetable stock or water
400g can of chopped tomatoes
100g fresh spinach
flaked sea salt
freshly ground black pepper
1 tsp cumin
1 tbsp worcester sauce
Directions
- This is not one of your dribbly dhals but a proper meal in itself, especially if served with some rice or flatbread. And we find it's even better cooked in a pressure cooker than in a regular pan. A green vegetable alongside is nice too.
- SERVES 4 Heat the oil in the pressure cooker and add the onion. Cook it over a medium heat for 5 minutes until it's starting to take on some colour, then add the garlic, ginger, coriander stems, sweet potato and curry powder. Stir thoroughly for a minute or so until everything is well coated with the curry powder.
- Add the red lentils, then pour the hot stock or water and the tomatoes into the pan. Season with salt and pepper and stir thoroughly again. Add the spinach.
- Garnish with thinly sliced chillies and chopped coriander.
- Good with Naan Bowls or basmati rice!
